Sabayon (Zabaglione)

				Ingredients
- 6 egg yolks
 - 1/2 cup sugar
 - 1/2 cup Marsala (sweet amber)
 - 1 pinch of kosher salt
 
Equipment
- 4 quart sauce pan
 - Large glass mixing bowl that fits pan
 - Thermometer
 - Electric hand mixer
 
  
Preparation
- Bring 1" water in a 4 qt sauce pan to a boil
 - In a large glass mixing bowl, add sugar and eggs
 - Using an electric mixer, cream to ribbon stage
 - Add kosher salt
 - Slowly add Marsala until fully emulsified (salad dressing consistency)
 - Turn boiling water down to a simmer
 - Place bowl on top of pan, in a double boiler arrangement
 - Continue mixing until temperature is 145F to 150F (about 15 minutes)
 - Remove from heat
 - Serve over mixed berries
