Vegan Oatmeal Raisin Blueberry Cookies

Ingredients

  • 1/3 cup soy milk
  • 2 Tbsp ground flax seeds
  • 2/3 cup brown sugar
  • 1/3 cup oil
  • 1 tsp vanilla extract
  • 3/4 cup flour
  • 1/2 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • 1/4 tsb baking soda
  • 1/4 tsp salt
  • 1 1/2 cups quick-cooking oats
  • 1/2 cup raisins
  • 1/2 cup blueberries


Preparation

  1. Preheat oven to 350F
  2. Mix the soy milk, flax seeds, brown sugar and oil until it looks like caramel.
  3. Add the vanilla extract, flour, cinnamon, nutmeg, baking soda and salt.
  4. Fold in oats, raisins and blueberries.
  5. Using #20 disher, drop dough spaced 2" apart on cookie sheet lined with parchment paper; flatten slightly after placing.
  6. Bake for 10 minutes for chewey cookies, 12 minutes for crunchy.


Notes

  • Cooked for 14 minutes on Silpat, still seem under-cooked.
