Pickle Juice Biscuits

The cookies are called Leposhki iz rosole (Biscuits from Pickle Juice)

Ingredients

  • 1 cup of low vinegar content pickle juice (non-pasteurized!)
  • 1 cup of sugar
  • 1/2 cup of oil (Olive or Sunflower)
  • 1 tsp baking soda
  • 1 Tbsp spoon of mayonnaise
  • 4 cups of flour


Preparation

  • Pre-heat oven to 350F
  • Combine all ingredients, adding flour last
  • Mix only until combined
  • Form in hand, small biscuit size
  • Bake until lightly brown


Notes

  • An ethnic eastern European non-pasteurized pickle juice is best. Pasteurized will result in no leavening action.
